Arrosti Il Borgo

The delicious taste and practical consumption of our Arrosti makes them extremely popular with consumers. For the roast suckling pig and the roast log, the product is first favoured in keeping with Tuscan tradition: salt, rosemary, garlic and a pinch of fennel flowers.

 

Then it is tied by hand and cooked at a high temperature to allow the delicious crust to form. Before grilling, the meat is “syringed” with a saline solution with the addition of flavourings and then massaged and tied. The grilling is carried out at a lower temperature and for a longer time, until the surface turns a characteristic hazelnut colour.

    Roast log

    It includes the boned loin and bacon and is the pride of our production. Seasoned with salt, pepper, fresh chilli, garlic and rosemary, and tied by hand, it is roasted in the oven, paying particular attention to the browning of the skin, which must be crunchy throughout.
